WebEverything depends on heat treat of course. But S90v is much harder to sharpen than 20cv, it’s more prone to chipping, and when it loses its fine edge, it has the tendency to become toothy. Which isn’t necessarily a bad thing, just depends on what you want. 20cv is all around the much better steel imo.
